This recipe goes out to my mom who mastered the original version of tater tot casserole while balancing with three kids pulling at her legs. (Big round of applause to all my mama friends!!) Life is crazy. Your food shouldn’t have to be.
So – easy, breezy casserole is on the dinner table! Those little tots dancing on top are cauliflower disguised as potatoes. I tried my first batch of these cauliflower tots and LOVE the texture and taste. They are brand new to my grocery store and were sold out the second and third and fourth time I went back. (Sigh, obsessed I know.) The stocker said he has not been able to keep them on the shelves. I managed to find some at a different store and may have stocked up on a years worth of cauliflower tots… Outside of the taste, another reason I like them is because they are slightly leaner than the average baked tater tots. A quick comparison shows they carry 50 calories less and 4 grams of fat less per serving.
So the toughest part of this recipe? Browning the meat. Oh and not picking all the baked tots off when they come out of the oven. This recipe doesn’t earn any creativity points but does earn satisfaction points. Meat, veggies and cream soups for the win!!
Let’s get cooking!Cauliflower Tot Casserole
Ingredients:
- 1 tbsp butter
- 1 small onion, diced
- 1 lb ground hamburger or turkey
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 2 cans green beans, liquid drained
- 1/2 tsp cumin
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1 bag cauliflower tots
- Optional: 1 cup grated cheddar cheese
Directions:
- Preheat oven to 350 F.
- In large frying pan, add butter and diced onion. Cook onion until transparent. Add ground meat and cook until brown.
- In large mixing bowl, add meat and onion. Mix in soups, green beans, cumin, garlic powder, salt and pepper. Pour into 9×9 inch baking dish. Top with cheese and cauliflower tots.
- Bake in oven for 30 minutes, or until tots are lightly browned.
What else could I use these tots for? Hmmm… a cheesy breakfast casserole with sausage?! An appetizer with bacon and queso? To be continued…
