Have mercy! I am a fan of anything chocolate and anything peppermint. Make it double chocolate and double peppermint?! (Swoon.) Yes! These pack so much peppermint and chocolate into one bite that they are sure to knock Santa’s stockings off.
So what makes them double chocolate? The dough uses cocoa powder to ensure the cookie is saturated with amazingness. Dark chocolate chips pack in extra chocolate. The peppermint comes in two forms, with the first being from mint morsels. To simplify the baking process I used this blend of dark chocolate and mint chips from my grocery store’s baking aisle. The second peppermint in the cookie is crushed candy canes. Yes – crushed candy canes! When candy canes or peppermints are baked in cookie dough they actually soften. I crushed the candy canes so there was a blend of broken chunks of peppermint and fine pieces that blend in with the dough.
Double Chocolate & Double Peppermint Cookies
Ingredients:
- 2 cups all-purpose flour
- 2/3 cup baking cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 2 sticks butter, softened
- 2/3 cup granulated sugar
- 2/3 cup packed brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 10 oz bag of dark chocolate and mint morsels*
- 5 candy canes, crushed, plus candy canes for garnish
Directions:
- Preheat oven to 350 degrees.
- In a medium sized bowl mix flour, cocoa powder, baking soda and salt.
- In a large mixing bowl, mix butter, sugars and vanilla extract. Add eggs, one at a time.
- Slowly mix in flour-cocoa mixture until fully blended.
- Stir in crushed candy canes and chocolate-mint morsels.
- Refrigerate dough for an hour.
- Roll into small balls and place onto ungreased baking sheet.
- Bake for 10-12 minutes.
- Optional: Sprinkle additional crushed candy cane over cookies when they come out of the oven. Serve on platter with candy cane garnish.
* If a bag of dark chocolate and mint morsels are unavailable, substitute for 1 cup dark chocolate chips + 2/3 cup mint morsels, or a 10 oz bag of mint chocolate chips.
