For Grandma

Red Holiday Dress || joyfully soIt was the late ’90’s and I was tucked in my hotel bed at the beautiful Atlantis Resort in the Bahamas. My middle school self had been worn out by the sun and endless amounts of food. Around 2 am the door crashed open. I heard a scream, “I won! I won!”

Chocolate Whiskey Truffles

Delicious chocolate whiskey truffles || joyfully soAfter school, I used to go up the neighborhood street to visit my friend, Kate. Her family made several delicious treats, such as fondue, chocolate-peanut butter pancakes and whiskey truffles. Since the first bite of their homemade whiskey truffles, I have been hooked! They are sweet, rich and have a little kick! Let’s be real – chocolate is great, cocktails are great. The combination of chocolate and alcohol together? Incredible! I’m so thankful she introduced me to them as they have become a favorite holiday staple.

Kale and Blood Orange Salad

Kale and blood orange salad || Joyfully So

Every year after Thanksgiving, I find myself trying to find creative ways to eat the leftovers. Turkey soup, turkey sandwiches and turkey with BBQ sauce all go on rotation, in addition to the remaining side dishes. But between the leftovers, I try to mix in a few fresh and healthy meals and salads. This dish fits the bill!
