It’s officially a week until Halloween! With the cooler temperatures ahead, I often turn to warm foods and drinks. Soups, stews and lattes are a few favorites! I love sipping on pumpkin spice lattes during this festive season, but don’t like the high sugar, high calorie and high cost found in coffee shop lattes. With a little experimenting, I created a 105 calorie pumpkin spice latte to enjoy on these beautiful fall mornings.
For the espresso part of the latte, I used my Nespresso machine. (These machines are amazing and go on sale occasionally through Williams Sonoma) If you don’t have access to an espresso machine, you can easily substitute strong brewed coffee. With the other ingredients it totals 105 calories and is rich in calcium and Vitamin A. If you’re in the partying mood, add a few swirls of whipped cream!
The 105 Calorie Pumpkin Spice Latte
Ingredients:
- 1 cup skim milk
- 1 tbsp canned pumpkin puree
- 1 vanilla nespresso shot (or 1/4 cup strong brewed coffee)
- 1/4 tsp pumpkin pie spice, plus more for sprinkling
- 1.5 tsp vanilla extract
- 2 stevia packets (or 2-3 tsp sugar)
- Optional: Whipped cream, cinnamon stick
Directions:
- In small saucepan, add milk. Whisk in pumpkin puree. Heat to medium heat. Do not boil.
- Remove from heat. Whisk in expresso, pumpkin spice, vanilla extract and sweetener.
- Serve in a coffee mug immediately, when temperature is appropriate.
- If desired, top with whipped cream and sprinkle on additional pumpkin pie seasoning. Garnish with cinnamon stick.
