A couple years ago, I met my girlfriends at a coffee and wine bar. We laughed and talked for a few hours, all while sipping chardonnay and eating brie. Ever since that day, brie has reminded me of those good girlfriends. When I needed a last minute appetizer for a get together with those ladies, the nostalgic person inside of me wanted brie. Rather than bake an entire brie my boyfriend suggested bite sized brie hors d’oeuvres.
I made two versions, one with a small amount of cheese and the other with a more generous portion of cheese. Definitely use more cheese! When making these it may appear as if there is too much cheese, but when they bake everything flattens within the roll. I recommend using 1 inch cubes of brie with the rind removed.
As an alternative option, you can add a filling inside the roll to go with the brie. Preserves, jams, sauces, bacon, maple syrup with pecans are just a few delicious options. Or serve with a sauce on the side. Have fun and make it your own!
Quick Brie Bites
Ingredients:
- Refrigerated crescent dough, 8 rolls per tube
- 8 oz Brie, cut into 1 inch cubes
- 1 Egg white
- Optional dips or fillers: Apricot preserves, raspberry preserves, cranberry sauce, maple bacon, pecans
Directions:
- Preheat oven to 375 F
- Cut brie into 1 inch cubes. Discard rind, if desired.
- Roll out refrigerated crescent dough. Cut each triangle in half.
- Place a cube of brie in the middle of the triangle. (Optional: add a tsp of a filler with the cheese.) Fold up edges around the brie, pinching the sides to seal the dough.
- Place the brie bites onto a greased baking sheet.
- Brush egg wash over top of dough.
- Bake for 9-12 minutes, until golden brown.
- Allow to cool to the touch then serve immediately. Add a dip on the side of serving dish, if desired.
