Brussel sprouts might not be the most desirable vegetable, but when they are sautéed with bacon, they tend to become a popular side dish. Brussel sprouts are high on the satiety index and rich in vitamin C, fiber and antioxidants. Pair this with your favorite protein and you have a healthy, wholesome dish!
Brussel Sprouts with Bacon
Ingredients:
- 3 slices of bacon
- 1 tbsp butter
- 1/2 lb brussel sprouts, stems removed and halved
- 1/4 cup diced onion (about half of a small onion)
- 2 cloves garlic, minced
- Salt and pepper, to taste
Directions:
- In large frying pan, cook bacon over medium heat. Set bacon slices aside and reserve bacon grease.
- Add butter to the pan. Once butter melts, add brussel sprouts and onion. Allow to cook for 8-10 minutes, until vegetables are fork tender and caramelized, stirring occasionally. While vegetables cook, slice bacon into bite-sized pieces.
- Add garlic and bacon to pan, and cook for additional minute. Salt and pepper to taste.
- Serve while warm.
